We love food. Here is a recipe for cranberry orange ricotta muffins that we serve at the Moondance Inn.Cranberry-Orange Ricotta Muffins
2 c flour 4 c 6 c 8 c
½ c white sugar 1 c 1 ½ c 2 c
1 ½ tsp baking powder 1 TBSP 1 ½ TBSP 2 TBSP
¼ tsp baking soda ½ tsp ¾ tsp 1 tsp
1 c low fat ricotta cheese 2 c 3 c 4 c
1 cup buttermilk 2 c 3 c 4 c
2 eggs 4 6 8
1 TBS vanilla 2 TBSP 3 TBSP 4 TBSP
4 TBS melted butter ½ c ¾ c 1 c
1 ½ c dried cranberries 3 c 4 ½ c 6 c
½ cup orange juice concentrate 1 c 1 ½ c 2 c
1 c. white chocolate chips 2 c 3 c 4 c

Pour thawed OJ concentrate over dried cranberries; heat on medium I microwave for about 5 minutes. Set aside.
Mix flour, sugar, baking powder & soda; blend well.
Put ricotta in bowl, mix in buttermilk, eggs, & vanilla.
Pour liquid into dry mixture; also pour in melted butter.
Add white chocolate chips.
Mix just til moist.
Spoon into well greased or coated w/cooking spray muffin cups.
Bake at 375 for approx 20 minutes.
Also good with blueberries, fresh or frozen, add lemon zest & omit OJ.
This makes about a dozen muffins; they freeze well.

Bald Eagle in Winter,

It is bald eagle migration time. Each year from the middle of February through the middle of March, hundreds of them migrate up the Mississippi River Valley through Red Wing. It is an amazing sight. Eagle spotting tents are set up in Colville Park; binoculars are available. Stay at the Moondance Inn Bed and Breakfast. We can guide you to the eagle sighting as well as to other happenings in the area.

Yes it is winter. Yes there is a lot of snow in Red Wing. But it is getting hot indoors. February 5th. at the Sheldon Theater, catch Chicago’s Jimmy Johnson Blues Band. You will be shaking in your seats! Or, for something totally different, visit Sargent’s Nursery for a Quilt Show. That’s right, tropical plants, a warm greenhouse, and Quilts! Who knew?

We hope all of you had a great holiday season. Red Wing was beautiful with over 30 inches of snow, four of which fell Christmas eve. If winter outdoor sports is your thing, come to Red Wing for downhill skiing, cross country, snow shoeing, etc. We still have plenty of snow.

Currently there is 16 inches of snow on the ground. It is a perfect time for downhill skiing at Welch Ski Village, cross country skiing at numerous groomed trails, or sitting by the fire with a nice glass of wine.

Stay New Year’s Eve in a luxurious room that features a private bath with a two-person whirlpool and a fireplace. Enjoy wine and appetizers in the evening plus a sumptuous breakfast, by candlelight, at your private table for two. A full dinner at Sarah’s Restaurant (formerly the Norton’s) is included. Prices start at $260.00 plus tax.

Add a second night stay (Saturday night) at our standard room rate and enjoy all the above amenities plus wine and appetizers on Saturday evening and a candlelit breakfast both mornings. We will serve our traditional Cajun New Year’s Dinner on Saturday evening at candlelit tables for two. The day after Thanksgiving is Red Wing’s annual Holiday Stroll. A lighting ceremony, parade, fireworks, shopping, roasting chestnuts are all a part of this fun and festive evening.

Another great holiday event is the annual Bed and Breakfast open house on the first Sunday in December. 7 grand homes are decorated for your visit with refreshments served at each. All proceeds go to Habitat for Humanity. Tickets are $10 in advance and $15 at the door. You can purchase tickets at the Red Wing VCB or any of the B&B’s. Tickets are free if you stay at one of the B&B’s.
